Greek Salad
This is such a simple, satisfying recipe. My Grandparents live in Greece (even though they aren’t Greek) in a picturesque little coastal town. My Gran grows all her own veggies and they press their own olive oil from the olives they grow on their property. When I think of Greek salad, the veggies are still warm and slightly soft from the Mediterranean sun. They are swimming in thick, dark olive oil and the feta is rich and crumbly. A Greek salad is my idea of comfort food at it’s finest.
This is my recipe but without the exact quantities.
English cucumber
Tomatoes
Red onion
Yellow pepper/capsicum
Kalamata olives
Feta
Olive Oil (preferably EVOO)
Red wine vinegar
Crushed garlic
Dice the veggies and toss with the oil, vinegar and garlic. Crumble the feta over the top and there you have it!
